Mom’s Southern BBQ
2 Onions, pulverized
3/4 C White Vinegar, Apple Cider Vinegar, or combination of the two
2+ T Dry Mustard powder
1 T Molasses
1/3 C Worcestershire Sauce
1 T Lemon Juice
2+ Garlic cloves, minced
4 oz Tomato Paste
Black Pepper, Red Pepper flakes, Cayenne, Paprika, and Hot Sauce, to taste
DIRECTIONS
Cook Onions down until fragrant, then add Vinegar.
Add remaining ingredients.
Cook on Medium-Low heat for a an hour or two, stirring occasionally.
Remove from heat. Allow to cool down before liquefying in a food processor or blender
FOR RIBS
Remove thin membrane from ribs.
Parboil ribs in a solution of Water, Vinegar, and Bay Leaves in a large, tall pot.
Boil for 30-40 minutes, remove from pot, and trim excess fat.
Baste with BBQ Sauce and cook on indirect heat or in oven at 350°F for 3-4 hours on vertical rack, re-basting as desired.
Turn heat to high (or broil, if in oven), charring the broad sides for a couple minutes each.
